The PCE-FOT 10 measures the quality and the temperature of frying oil. The measuring tip is held directly in the hot fat in the fryer and gives a reading within a few seconds: temperature in °C or °F and the share of polar compounds (PC value) in percent. The PC value indicates the thermal-oxidative stress level of the oil, and the status LEDs show the result in colour.
Food inspectors and commercial kitchens use the meter to decide when oil must be changed. The DGF (German Society for Fat Science) regards 24 percent polar compounds as the limit for frying fat; national PC limits may also apply. Because oils behave differently, four fixed calibrations (semi-liquid, liquid, solid) and 6 variable memory slots are available.
